SOMMELIER PABLO AGUILAR BIOGRAPHY

Pablo Aguilar is a sommelier, hospitality professional, author, and founder of WiNEisFOOD. With more than 25 years of experience in restaurants, wine service, culinary programming, and hospitality leadership, his work is grounded in a simple conviction:
Wine belongs at the table, with food, in moderation, and in shared life.
Pablo’s career began as a coffee waiter and developed through decades of direct service, study, leadership, and collaboration with chefs, restaurateurs, winemakers, and guests. His philosophy was shaped not only by formal wine education, but by years spent observing how food, wine, service, and human connection come together at the table.
A Life in Hospitality
Pablo developed his craft while working alongside leading figures and institutions in American hospitality, including David Bouley, Alain Ducasse, Costas Spiliadis, the James Beard Foundation, and the Ryland Inn, a Relais & Châteaux property recognized for its restaurant and wine program.
His work has included restaurant service, wine-program leadership, education, events, consulting, and editorial projects. In Tulsa, he led the wine program at Lowood Restaurant to a 2023 Wine Spectator Award and later served as head sommelier at The Summit Club.
He currently serves as head sommelier at Boston Title & Abstract, where he continues to explore the relationship between thoughtful wine curation, food, service, and the emotional rhythm of the dining experience.
A Self-Made Sommelier
Pablo describes himself as a self-made sommelier because his understanding of wine began through work, curiosity, and the experience of serving people.
He believes technical knowledge is essential, but incomplete on its own. A sommelier must also understand timing, generosity, attention, communication, and the atmosphere of the table.
He complemented his professional experience with studies through Columbia University’s Fast Trac program, the French Culinary Institute, and the International Wine Center.
For Pablo, wine knowledge is not meant to create distance. It should help people feel more confident, more curious, and more connected to what they are eating, drinking, and sharing.
The Wine Is Food Philosophy
WiNEisFOOD was founded to restore wine to its rightful context.
For too long, wine has often been presented as an isolated luxury product, a technical exercise, or a performance of expertise. Pablo’s work returns wine to food, agriculture, hospitality, culture, ritual, and community.
The phrase “Eat wine. Don’t just drink it.” expresses this philosophy.
To “eat” wine is to experience it as part of a complete table. It means considering where the wine comes from, how it was made, when and how it should be served, and why it matters in human life.
This approach is expressed through four essential perspectives:

The Private Cellar Exchange
Pablo also created the Private Cellar Exchange, a gathering centered on generosity, discovery, and shared experience.
Participants bring bottles that matter to them—wines with a story, a memory, a sense of place, or a reason to be shared. The purpose is not competition, collecting, or status. It is to give people the opportunity to taste wines they might not otherwise encounter and to understand them through food, conversation, and community.
The Private Cellar Exchange puts the Wine Is Food philosophy into practice. A bottle becomes more meaningful when it leaves the cellar, reaches the table, and is shared with others.
Writing and Education
Pablo is the author of publications created to make wine knowledge more practical and accessible.
The Latin Connoisseur Wine Guide is a bilingual introduction to wine service and a guide to wines of Hispanic origin.
The Wine Is Food Guide introduces foundational ideas about wine service, pairing, and enjoyment.
His continuing work explores the deeper relationship among wine, food, hospitality, emotional connection, and human experience.
Pablo’s writing is intended for both professionals and everyday wine lovers. His goal is not to tell people what they should admire, but to give them the confidence and context to discover what has meaning for them.
