Pablo Aguilar is a seasoned hospitality professional with over 25 years of experience. His journey began as a coffee waiter and blossomed into leadership roles across various facets of the industry. Pablo’s mission is to make wine accessible and enjoyable for everyone. Through Wine is Food, he aims to empower wine enthusiasts with the knowledge and confidence to navigate the world of wine with ease and enjoyment.

A Self-Made Wine Sommelier

Driven by a lifelong curiosity, Pablo’s passion for wine ignited while working with renowned chefs in New York City. He believes a true sommelier understands both the technical aspects of wine and the art of hospitality, born from years of experience interacting with guests. He complemented his hands-on experience with formal education, graduating from Columbia University’s Fast Trac program and further honing his skills at the French Culinary Institute and the International Wine Center.

A Career Marked by Excellence

Pablo’s impressive career includes collaborations with culinary icons like David Bouley, Alain Ducasse, and Costas Spiliadis. He held prestigious positions at the James Beard Foundation and Relais Chateau Ryland Inn (awarded best restaurant and wine list in New Jersey by the New York Times and Wine Spectator). He also led the wine program at Lowood Restaurant to a 2023 Wine Spectator Award and served as head sommelier at The Summit Club in Tulsa.
